Iako sli\u010dne konzistencije, ovaj sir je ne\u0161to gu\u0161\u0107i od same ricotte.<br><br><strong>\u017dumanjci<\/strong>: Dodatak \u017eumanjaka poma\u017ee boljem povezivanju ostalih sastojaka i olak\u0161ava formiranje tijesta u njoke.  Za najbolji rezultat koristite jaja srednje veli\u010dine.<br><br><strong>&#039;00&#039; bra\u0161no<\/strong>: '00' bra\u0161no je talijansko, fino-mljeveno, glatko bra\u0161no koje se tradicionalno koristi za izradu tijesta za tjesteninu i pizzu, ali i za njoke. Umjesto per\u0161ina mo\u017eete odabrati i neko drugo aromati\u010dno bilje poput bosiljka, maj\u010dine du\u0161ice, itd.<br><br><strong>Bob<\/strong>: Bob, u SAD-u poznat i kao fava grah, dolazi iz obitelji mahunarki zajedno s gra\u0161kom, mahunama ili slanutkom. Nakon \u0161to se ubere, bob ima prili\u010dno kratak \u017eivotni vijek, samo 2-3 dana, nakon \u010dega mu mahuna po\u010dinje omek\u0161avati, a sjemenke mijenjaju boju i postaju sve gorkastije. <br><br>Dakle, kada kupujete bob na tr\u017enici, svje\u017ee ubran bob \u0107ete prepoznati po \u010dvrstim, hrskavim mahunama, bez zra\u010dnih d\u017eepova.<\/p>\n\n\n\n<p>Dok se mladi bob (obi\u010dno manji od 5 cm) mo\u017ee jesti cijeli, onaj zreliji je potrebno o\u010distiti za najbolji okus. Smrznutom bobu je ve\u0107 prethodno uklonjena mahuna pa je i proces \u010di\u0161\u0107enja br\u017ei, a rezultat ujedna\u010deniji. <br><br><strong>Cherry raj\u010dice<\/strong>: So\u010dne, slatke cherry raj\u010dice, aromatizirane \u0111umbirom, \u010de\u0161njakom i limunom, savr\u0161en su dodatak ovim njokima od kozjeg sira. Zatim pa\u017eljivo uklonite kuhinjski papir te sir odva\u017eite u posudu u kojoj \u0107ete izraditi tijesto.<br><br><strong>Izrada tijesta za njoke<\/strong><\/p>\n\n\n\n<p>Proces izrade ovog tijesta za njoke je iznimno brz i jedostavan. Potrebna vam je samo jedna ruka i pokret gnje\u010denja kojim \u0107ete ravnomjerno sjediniti sastojke. Nje\u017eno utisnite kuglu kako biste dobili komad tijesta oblika diska. Pripremite posudu oblo\u017eenu papirom za pe\u010denje, a kada su njoki kuhani, prebacite ih u posudu, paze\u0107i da se njoki me\u0111usobno ne dodiruju. Ukoliko dodajete jo\u0161 jedan sloj, odvojite njoke jo\u0161 jednim papirom za pe\u010denje.<br>Stavite njoke na 20-30 minuta u zamrziva\u010d, a kada se malo stvrdnu, prebacite ih u manju posudu. Sjemenke imaju \u010dvrstu opnu zvanu sjemena lupina, dok se unutra kriju supke. Kod zrelije biljke, mahuna i sjemena lupina postaju vlaknaste i manje privla\u010dne za jesti, dok su najukusnije supke. <br><br>Osim prema veli\u010dini mahune, zreliji bob \u0107ete prepoznati po dlakavoj unutra\u0161njosti mahune.<br><br><strong>Uklanjanje mahuna<\/strong><br><br>\u010ci\u0161\u0107enje boba zahtijeva odre\u0111eno vrijeme, ali je i iznimno zabavan i smiruju\u0107 proces.<br>Zapo\u010dnite tako \u0161to \u0107ete zarezati vrh mahune sa strane kojom se dr\u017eala za biljku.
