Osim \u0161to sam imala odli\u010dnog osobnog kuhara (mamu :)), imala sam i iznimno obzirnog brata, koji je rado dijelio svoju porciju povr\u0107a sa mnom. Ipak, \u010dini mi se da \u0107e ovoga puta, kada proba ovaj recept, biti skloniji zadr\u017eati sve za sebe!<\/p>\n\n\n\n<p>Ovo povrtno varivo s piletinom i batatom je upravo inspirirano tim sje\u0107anjima i zato mi je posebno drago. U slu\u010daju cjelovitog zrna, sa\u010duvan je vanjski sloj u kojem su pohranjeni vitamini, minerali i zna\u010dajan dio vlakana, \u010dine\u0107i ga nutritivno bogatijom opcijom.<\/p>\n\n\n\n<p>Upravo iz tog razloga, neolju\u0161teni je\u010dam zahtjeva i ne\u0161to du\u017ee kuhanje. Kako bi recept u\u010dinila pristupa\u010dnijim, odabrala sam olju\u0161teni je\u010dam, ali ako imate malo vi\u0161e vremena, nemojte zaboraviti dobrobiti njegove cjelovite forme. <\/p>\n\n\n\n<p><strong>Kelj<\/strong>: Iako postoji neobrojeno vrsta kelja, bitno je da su listovi \u010dvrsti i jarkozelene boje. Stariji kelj ima tendenciju biti pomalo gorak i \u017eilav. Ukoliko volite pikantnije okuse, mo\u017eete odabrati i njenu ljutu varijantu. <\/p>\n\n\n\n<p><strong>\u010cili guajillo<\/strong>: U meksi\u010dkoj kuhinji je drugi naj\u010de\u0161\u0107e kori\u0161teni su\u0161eni \u010dili, odmah nakon anchosa. Dobiva se su\u0161enjem mirasol \u010dili papri\u010dice, blage do umjerene ljutine. Mo\u017eete ga prona\u0107i kao cijele su\u0161ene papri\u010dice koje se mogu tostirati i samljeti u mu\u017earu ili u obliku ve\u0107 gotovog praha.<br>Prona\u0107i \u0107ete ga u specijaliziranim du\u0107anima za za\u010dine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kako napraviti povrtni temeljac?<\/h2>\n\n\n\n<p>Ako nemate vremena, mo\u017eete uvijek odabrati kupovni povrtni temeljac, ali poku\u0161ajte na\u0107i onaj bez poja\u010diva\u010da okusa poput natrijevog glutamata. Nare\u017eite ga na ve\u0107e komade i stavite u lonac s hladnom vodom. Pri\u010dekajte da voda zavrije, te kuhajte na laganoj vatri, otprilike 40 minuta. Slijede\u0107i ovaj recept, dobit \u0107ete oko 1,5 L povrtnog temeljca.<\/p>\n\n\n\n<p><strong>Va\u017eno<\/strong>: Povrtni temeljac nikada ne solite! Budu\u0107i da \u0107ete ga kasnije dodavati razli\u010ditim jelima (variva, juhe, umake), dodatno \u0107ete ga reducirati. Premijestite ga u hermeti\u010dki zatvorenu posudu. Dr\u017eite ga u hladnjaku do 3 dana, a u zamrziva\u010du 4-6 mjeseci. Za opciju zamrzavanja mo\u017eete koristiti i plasti\u010dne vre\u0107ice za vi\u0161ekratnu upotrebu, sa sustavom zatvaranja na patentni zatvara\u010d, ali meni je prakti\u010dnija i dra\u017ea opcija posude.<br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Savjeti za zamjenu<\/h2>\n\n\n\n<p>Ovdje va\u0161a kreativnost dolazi do izra\u017eaja. Upotrijebite ovaj recept za povrtno varivo kao bazu s kojim mo\u017eete napraviti toliko razli\u010ditih varijacija.<br><\/p>\n\n\n\n<p><strong>Batat<\/strong>: Nemate batat? Bulgur (p\u0161enica) i sme\u0111a ri\u017ea padaju vam na pamet, ali slobodno eksperimentirajte s bilo kojom drugom opcijom.<\/p>\n\n\n\n<p><strong>\u0160to se ti\u010de za\u010dina<\/strong>, najbolja zamjena za ma\u0111arsku slatku papriku bila bi kajenski papar.
