Potreban je samo jedan dodatak - ko\u0161ara za kuhanje na pari - koja \u0107e vam trajati godinama.<br>Za razliku od klasi\u010dnog kuhanja u vodi, kod kuhanja na pari nemate straha od prejakog klju\u010danja ili kipljenja vode iz lonca.<\/p>\n\n\n\n<p><strong>Tako\u0111er, kuhanje krumpira na pari omogu\u0107uje najbolje zadr\u017eavanje hranjivih tvari u usporedbi s naj\u010de\u0161\u0107e kori\u0161tenim tehnikama poput pe\u010denja ili kuhanja u vodi<\/strong>. I to u znatno kra\u0107em vremenu.<\/p>\n\n\n\n<p>Naravno, ne\u0107e sve sorte krumpira biti savr\u0161eno prikladne za kuhanje na pari, ali one koje jesu:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>ne zahtijevaju guljenje<\/strong><\/li>\n\n\n\n<li><strong>zadr\u017eavaju vlagu<\/strong><\/li>\n\n\n\n<li><strong>zadr\u017eavaju savr\u0161en oblik nakon kuhanja<\/strong><\/li>\n\n\n\n<li><strong>ravnomjerno su kuhani<\/strong><\/li>\n\n\n\n<li><strong>omogu\u0107uju vam lako rezanje, bez raspadanja<\/strong><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Koja vrsta krumpira je najbolja za kuhanje na pari?<\/h2>\n\n\n\n<p>Sada se vjerojatno pitate kako \u0107ete znati koje su sorte krumpira najprikladnije za kuhanje na pari? O \u010demu to ovisi?<br>S obzirom na to da u svijetu postoji oko 4000 razli\u010ditih sorti krumpira, savjetujem vam da se ne usredoto\u010dite na pronala\u017eenje odre\u0111ene sorte, ve\u0107 vrste krumpira koja najbolje odgovara va\u0161em odabranom na\u010dinu kuhanja.<br>Sre\u0107om, postoje samo tri glavne vrste koje biste trebali znati: \u0161krobna, vo\u0161tana i vi\u0161enamjenska.<\/p>\n\n\n\n<p>Kao \u0161to naziv govori, \u0161krobnu ili bra\u0161nastu vrstu odlikuje najve\u0107i udio \u0161kroba, \u0161to ju \u010dini izvrsnom za pripremu pire krumpira, njoki i pomfrita, jer krumpiri ove vrste imaju veliku sposobnost upijanja. <strong>Sorte krumpira \u0161krobne vrste: <\/strong>Maris Piper (UK), Rooster (UK), Yukon Gold (Kanada).<\/p>\n\n\n\n<p>Na suprotnoj strani su vo\u0161tani krumpiri, koji imaju najmanji udio \u0161kroba i najve\u0107i udio vode. Zahvaljuju\u0107i tome imat \u0107e bar\u0161unastiju teksturu i bolje \u0107e zadr\u017eavati oblik pri kuhanju. Bit \u0107e idealni za pripremu slo\u017eenaca, variva ili salata. <strong>Sorte krumpira vo\u0161tane vrste:<\/strong> Adora (NL), Monalisa (NL), Charlotte (FR).<\/p>\n\n\n\n<p>A onda, negdje izme\u0111u, nalaze se oni vi\u0161enamjenski, koji \u0107e dati zadovoljavaju\u0107e rezultate kroz razli\u010dite na\u010dine pripreme. <strong>Sorte krumpira vi\u0161enamjenske vrste:<\/strong> Bintje (NL), Cleopatra (NL), Desiree (NL), Vivaldi (NL). Na\u017ealost, u Hrvatskoj su u komercijalnom uzgoju znatno vi\u0161e zastupljene strane sorte.<\/p>\n\n\n\n<p>Kada je u pitanju kuhanje na pari, najbolje je odabrati sortu krumpira vo\u0161tane vrste. Mogu biti razli\u010ditih boja, ali \u0107ete ih prepoznati po tanjoj i nje\u017enijoj kori, koju nije potrebno guliti. Takvi krumpiri su obi\u010dno mla\u0111i, ranije ubrani, a samim time i sitniji.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kako kuhati krumpir na pari?<\/h2>\n\n\n\n<p>Napunite lonac s tri prsta vode (visine oko 5 cm), paze\u0107i da ona ne dodiruje ko\u0161aru za kuhanje na pari. Pokrijte ga i zakuhajte vodu. Dok \u010dekate da voda po\u010dne klju\u010dati, dobro operite krumpire te ostavite koru koja \u0107e dodati vrijednu koli\u010dinu vlakana.<br>Kada voda zakuha, stavite krumpir u ko\u0161aru za kuhanje na pari, posolite ga i kuhajte poklopljenog 15-20 minuta, u ovisnosti o veli\u010dini krumpira. Kako biste bili sigurni da su va\u0161i krumpiri kuhani, probodite ih vrhom no\u017ea. Savr\u0161eno nadopunjuje kremastost krumpira kuhanog na pari i so\u010dnost lososa te odli\u010dno povezuje sve ostale sastojke.<\/p>\n\n\n\n<p>Iako su dresinzi obi\u010dno vrlo bogati mastima zbog velike koli\u010dine ulja, ovaj umak za salatu dobar je primjer kako to ne mora uvijek biti tako.<br>Prvo sitno nasjeckajte luk i pirjajte ga na laganoj vatri dok ne postane mekan i sladak, ali bez da promijeni boju, 7-8 minuta. Zadnje dvije minute dodajte za\u010dine: slatku papriku i kajenski papar. Kratkim kuhanjem pobolj\u0161at \u0107ete njihove arome.<\/p>\n\n\n\n<p>Za sljede\u0107i korak \u0107e vam trebat prili\u010dno jak ru\u010dni blender kako biste omogu\u0107ili da se svi sastojci pomije\u0161aju i daju lijepu kremastu teksturu. No, kuhanje graha kod ku\u0107e ima puno prednosti.<\/p>\n\n\n\n<p>Ne znam sla\u017eete li se sa mnom, ali grah iz konzerve ima prili\u010dno mljecavu teksturu i neutralan, nezanimljiv okus, miljama daleko od graha kuhanog kod ku\u0107e. Osim bolje teksture i okusa, ima i ve\u0107u nutritivnu vrijednost, jer ne prolazi kroz proces sterilizacije koji se koristi kod konzerviranja graha.<\/p>\n\n\n\n<p>Imajte na umu da postoji puno razli\u010ditih mi\u0161ljenja o tome kako najbolje kuhati grah. Meni se svi\u0111a metoda koju <a href=\"https:\/\/www.seriouseats.com\/how-to-cook-dried-beans\" target=\"_blank\" rel=\"noopener\">Serious eats<\/a> koristi za njegovu pripremu. Slijedite ove korake kako biste savr\u0161eno skuhali grah na vrlo jednostavan i u\u010dinkovit na\u010din:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Uklonite zrna koja su o\u0161te\u0107ena i provjerite da nema nekih ve\u0107ih ostataka poput kamen\u010di\u0107a. <\/li>\n\n\n\n<li>Isperite grah pod hladnom vodom kako biste uklonili svu pra\u0161inu ili prljav\u0161tinu.<\/li>\n\n\n\n<li>Stavite ga namakati u hladnu vodu sa <a href=\"https:\/\/www.seriouseats.com\/salt-beans-cooking-soaking-water-good-or-bad\" target=\"_blank\" rel=\"noopener\">1,5% soli<\/a>. Minimalno vrijeme namakanja je otprilike 4 h, ali ne bi trebalo biti du\u017ee od 24 sata. Koristite barem duplo vi\u0161e vode od graha, jer \u0107e bubrenjem udvostru\u010diti masu, a va\u017eno je da ostane pokriven. U slu\u010daju da ga nama\u010dete du\u017ee od 8 sati, prebacite grah u hladnjak kako biste sprije\u010dili eventualno kvarenje.  <\/li>\n\n\n\n<li>Odbacite teku\u0107inu u kojoj ste namakali grah.<\/li>\n\n\n\n<li>Stavite ga u lonac i prelijte hladnom vodom. Mo\u017eete lagano posolite vodu, iako nije potpuno nu\u017eno. Slobodno dodajte razli\u010dito povr\u0107e poput luka, mrkve i celera, kao i za\u010dine poput lovora ili ru\u017emarina kako biste grahu dali jo\u0161 bolji okus.
