Odabir pravih kombinacija povr\u0107a i vo\u0107a, \u017eitarica koje im odgovaraju okusom i teksturom, najboljeg izvora proteina koji \u0107e jelo u\u010diniti nutritivno potpunim i na kraju, sljebljivanje svih elemenata odgovaraju\u0107im dresingom. Za mene je to putovanje kao nijedno drugo, vjerojatno zato \u0161to su salate moje omiljeno jelo, bez obzira na godi\u0161nje doba.<\/p>\n\n\n\n<p>Iako je u ovo doba godine izbor povr\u0107a ograni\u010den, sre\u0107om imamo nepresu\u0161ni izbor razli\u010ditih zimskih salata, kao i agruma, koji mogu pomo\u0107i u ja\u010danju na\u0161eg imuniteta i uspje\u0161no izbje\u0107i prehlade i bolesti. Biljka se bere dok je jo\u0161 zelena, prije dostizanja pune zrelosti, a zatim pali, kako bi joj se uklonila ljuska. Paljena p\u0161enica se zatim \"trlja\" ili mlati kako bi se oslobodila mlada dimljena zrna.<br>Zbog spomenute specifi\u010dnosti u obradi, freekeh ima vrlo poseban, jedinstven okus. \u017dilavijom teksturom je pak najsli\u010dniji ostalim oblicima i sortama p\u0161enice kao \u0161to su bulgur, farro, sirak, pir itd.<\/p>\n\n\n\n<p>Freekeh je neizostavan u sjevernoafri\u010dkim kuhinjama, kao i na Bliskom istoku. Mo\u017eete ga koristiti u zamjenu za ostale \u017eitarice, a nevjerojatno dobro funkcionira u razli\u010ditim jelima kao \u0161to su juhe, salate, pilavi ili ri\u017eota. Osim fantasti\u010dnog okusa, freekeh je vrijedan dodatak na\u0161oj prehrani. Kad je sirov, ima ja\u010di okus anisa, koji kuhanjem postaje sla\u0111i i bla\u017ei. Danas \u0107emo ga koristiti sirovog, a malo kasnije \u0107u vam otkriti kako to mo\u017ee biti jo\u0161 hrskaviji dodatak va\u0161im salatama.<\/p>\n\n\n\n<p><strong>Rukola<\/strong>: Rikola je jedna od mog omiljenog lisnatog povr\u0107a! Mo\u017ee se kombinirati sa gotovo svime!<br>Prepoznatljiv papreni i gorkasti okus dolazi od biljnih spojeva zvanih fitokemikalije, koje se istra\u017euju u prevenciji i lije\u010denju raka, uz mnoge druge pozitivne u\u010dinke.<\/p>\n\n\n\n<p><strong>Radi\u010d<\/strong>: Vrsta lisnate cikorije poznat po crvenim listovima i bijelim \u017eilicama. Tako\u0111er im papreni okus, ali je ne\u0161to gor\u010di od rikole. Koristit \u0107u ga sirovog u ovoj freekeh salati, ali mo\u017ee se i zape\u0107i u pe\u0107nici ili na tavi, \u0161to ga \u010dini sla\u0111im i bla\u017eim.<\/p>\n\n\n\n<p><strong>Naran\u010da<\/strong>: Kao kontrast gorkim listovima salata, dodala sam slatku i osvje\u017eavaju\u0107u naran\u010du u segmentima, dok je naran\u010din sok dodatak dresingu. U nastavku mo\u017eete nau\u010diti kako segmentirati naran\u010du, ukoliko se jo\u0161 niste u tome isku\u0161ali.<\/p>\n\n\n\n<p><strong>Sjemenke nara<\/strong>: Ove male antioksidativne bombice pridonijet \u0107e slatko\u0107i, svje\u017eini i teksturalnoj \u0161arolikosti salate! Najbolje bi bilo kupiti svje\u017ei nar i o\u010distiti ga kod ku\u0107e (\u0161to \u0107u vam pokazati kako jednostavno napraviti). U slu\u010daju da nikako nemate vremena ili volje za to, nar mo\u017eete na\u0107i i ve\u0107 o\u010di\u0161\u0107en u nekim od bolje opremljenih trgovina.<\/p>\n\n\n\n<p><strong>Kozji sir<\/strong>: Postoji veliki izbor kozjih sireva, od mekih (mladih) do tvrdih (odle\u017eanih), od sla\u0111ih do o\u0161trijih. U ovom slu\u010daju sam odabrala polumeki sir slatkastog, pikantnijeg okusa koji se samo izmrvi po vrhu. Ako ste pak vi\u0161e za sna\u017enije, tvr\u0111e kozje sireve, mo\u017eete ih naribani na salatu i jednostavnije izmje\u0161ati s ostalim sastojcima.<\/p>\n\n\n\n<p><strong>Senf<\/strong>: U ovaj jednostavni dresing za salatu idu dvije vrste senfa: Dijon i senf od cjelovitog zrna. Dijon senf balansira slatke i kisele note svojom karakteristi\u010dnom pikantno\u0161\u0107u, dok senf od cjelovitog zrna daje zanimljivu zrnastu teksturu.<\/p>\n\n\n\n<p><strong>Ri\u017ein ocat<\/strong>: Ne koristi se tako \u010desto u zapadnim kuhinjama kao, na primjer, jabu\u010dni ili vinski ocat, ali ono \u0161to mi se posebno svi\u0111a kod njega je manje izra\u017eena kiselost. Isprobala sam ovaj recept koriste\u0107i i jabu\u010dni ocat, ali mi se vi\u0161e svi\u0111a prva opcija.<\/p>\n\n\n\n<p><strong>Med<\/strong>: Med je savr\u0161en kontrast senfu i octu te odli\u010dan dodatak slatkoj naran\u010di. Osim okusa, dresingu daje bolju konzistenciju i teksturu. Odaberite vrstu meda koju volite, ali cvjetni ili livadni med je dobra, sveobuhvatna opcija.<\/p>\n\n\n\n<p><strong>Maslinovo ulje<\/strong>: Na samom kraju, dresingu dodajemo maslinovo ulje. Mo\u017eete odabrati i jedno od biljnih ulja poput uljane repice ili suncokretovog ulja, ali za mene je apsolutni pobjednik pikantnije ekstra djevi\u010dansko maslinovo ulje.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><br>Priprema freekeh salate<\/h2>\n\n\n\n<p>Ovo je izrazito jednostavna zimska salata koja je idealna za one dane kada vam se ne provodi previ\u0161e vremena u kuhinji, ali si ipak \u017eelite priu\u0161titi hranjivi doma\u0107i obrok. Osim nekoliko jednostavnih tehnika rezanja i kuhanja freekeha, preostaje vam samo povezati sve sastojke dresingom od meda i senfa i va\u0161a salata je gotova. U slu\u010daju kada su zrna napuknuta, govorimo i dalje o cjelovitoj \u017eitarici, ali se ona kuha znatno br\u017ee od cijelih zrna.<\/p>\n\n\n\n<p>Kuhanje freekeha prili\u010dno je jednostavno. Izva\u017eite freekeh i isperite ga pod hladnom teku\u0107om vodom prije kuhanja. Stavite ga u odgovaraju\u0107u posudu, zajedno s vodom. Kad zavrije, smanjite vatru, lagano posolite i poklopite. Kuhajte freekeh na laganoj vatri dok ne omek\u0161a, ali i dalje zadr\u017eavaju\u0107i svoju karakteristi\u010dnu \u017eilavu teksturu.<\/p>\n\n\n\n<p><strong><em>Freekeh u cijelom zrnu<\/em><\/strong>: koristite omjer vode i freekeha 3:1 i kuhajte 30-35 minuta.<br><strong><em>Freekeh s napuknutim zrnima<\/em><\/strong>: koristite omjer vode i freekeha 2:1 i kuhajte 15-20 minuta.<\/p>\n\n\n\n<p>Nakon \u0161to je freekeh kuhan, ostavite ga poklopljenog jo\u0161 5 minuta, kao i druge \u017eitarice i pseudo\u017eitarice poput kvinoje, ri\u017ee, bulgura itd. To \u0107e mu omogu\u0107iti zavr\u0161etak kuhanja i zadr\u017eavanje vlage i so\u010dnosti. Prije dodavanja u salatu, lagano ga promije\u0161ajte vilicom kako bi odvojili zrna koja se stajanjem znaju malo slijepiti.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><br>Rezanje komora\u010da<\/h3>\n\n\n\n<p>Kad se komora\u010d jede sirov, volim da je izuzetno tanak (1-2 mm); puno bolje pro\u017eima dresing i lak\u0161e se stapa s ostalim sastojcima. Kako bismo u\u017eivali u sirovom komora\u010du, rezat \u0107emo ga popre\u010dno, po\u010dev\u0161i od vrha (li\u0161\u0107a), pribli\u017eavaju\u0107i se korijenu, a za to nam vrlo dobro do\u0111e mandolina. Najprije postavite \u017eeljenu debljinu na svojoj mandolini. Odre\u017eite peteljke s lukovice komora\u010da. Uhvatite komora\u010d s donje strane i po\u010dnite ga rezati.<\/p>\n\n\n\n<p>Kako bi komora\u010d bio dodatno hrskav, stavite ga u zdjelu s ledenom vodom na nekoliko minuta. Prvo odre\u017eite vrh i dno naran\u010de (1). Zatim naran\u010du polo\u017eite na jednu od odrezanih strana. No\u017eem po\u010dnite uklanjati koru naran\u010de, prate\u0107i njenu prirodnu zakrivljenost (2). Cilj je ukloniti koru zajedno sa tankom bijelom opnom koja okru\u017euje svaki segment naran\u010de. Pritom pripazite da ne skinete previ\u0161e mesnatog dijela naran\u010de. <\/p>\n\n\n\n<p>Zatim oguljenu naran\u010du polo\u017eite u ruku i krenite odvajati segmente na ovaj na\u010din: no\u017eem zare\u017eite  uzdu\u017e obje tanke bijele membrane koje okru\u017euju segment, prate\u0107i oblik slova V i tako ponovite za svaki sljede\u0107i segment, rotiraju\u0107i naran\u010du u ruci (3). Savjetujem vam da to radite nad zdjelom kako biste skupili sav sok. Na kraju, sve \u0161to \u0107e vam ostati je jezgra i lepr\u0161ave membrane koje ste, nadamo se, ostavili pri\u010dvr\u0161\u0107ene za nju. Rezanjem nara po pola popre\u010dno ili lupkanjem \u017elicom u nadi da \u0107e sjemenke poispadati, zapravo ih o\u0161te\u0107ujemo, gubimo sok, a pritom po\u0161pricamo pola kuhinje.<br>Pa, da vidimo, koji je to na\u010din onda bolji?<\/p>\n\n\n\n<p>Zare\u017eite koru nara oko samog dna, tvore\u0107i \u0161esterokut. Povucite za dno nara, uklanjaju\u0107i \u0161esterokut i otkrivaju\u0107i njegovu unutarnju strukturu. Vidjet \u0107ete da je zapravo podijeljen na nekoliko odjeljaka odvojenih tankim membranama. Prate\u0107i membrane, zare\u017eite koru nara po du\u017eini, paze\u0107i da ne zare\u017eete skroz do vrha kako bi vo\u0107ka dr\u017eala zajedno do samog kraja. Zatim prema potrebi, odjeljak povucite prema sebi i lagano ga odvojite od ostatka. Preostaje vam odvojiti sjemenke i sakupiti ih u zdjelicu.
