A recept u kojem sam zaista posebno u\u017eivala je upravo ovaj; pure\u0107a rolada punjena jabukom i celerom. Obi\u010dno se prodaje bez kosti i ko\u017ee, ali mo\u017eete ih prona\u0107i ili unaprijed naru\u010diti na kruni (sa prsnom kosti) ili s ko\u017eom.<br><br>Mogu jako varirati u te\u017eini, ali ono \u0161to \u0107e vam trebati za ovaj recept je 900 g otko\u0161tenih pure\u0107ih prsa bez ko\u017ee. To zna\u010di da \u017eelite ostaviti meso da se zagrije na sobnu temperaturu prije nego \u0161to po\u010dne proces kuhanja ili pe\u010denja.<br><strong>Za\u0161to je to va\u017eno?<\/strong> Postizanje sobne temperature, jednoliko, kroz cijelu povr\u0161inu mesa, rezultirati \u0107e ravnomjernijim kuhanjem. Dinstajte luk zajedno s celerom. Nakon otprilike 5 minuta dodajte jabuku, prstohvat mu\u0161katnog ora\u0161\u010di\u0107a i maj\u010dinu du\u0161icu. Zatim pokrijte tavicu kako biste ubrzali proces kuhanja i kako biste izbjegli dodavanje vi\u0161e ulja. Stavljanjem folije ispod i preko mesa sprije\u010dit \u0107e njegovo ljepljenje za dasku i znatno \u0107e olak\u0161ati rukovanje mesom. Tako\u0111er \u0107e sprije\u010diti \u0161irenje bakterija prilikom njegovom omek\u0161avanja kuhinjskim batom.<br><br>Kuhinjskim batom lupajte ravnomjerno cijelu povr\u0161inu prsa, ponavljaju\u0107i postupak 2-3 puta. Dovoljno je napraviti obi\u010dni dvostruki \u010dvor (slika 1). U nastavku, omotajte \u0161pagu oko svoje ruke kako bi dobili ne\u0161to nalik om\u010di (slike 2 i 3) te ju pridr\u017eite za spoj (slika 4). Na taj na\u010din meso zadr\u017eava so\u010dnost, a pe\u010de se br\u017ee od klasi\u010dne metode. Tako\u0111er, meso nije potrebno podlijevati tijekom kuhanja kako je to naj\u010de\u0161\u0107e slu\u010daj.<br><br>Polo\u017eite roladu na protvu oblo\u017eenu velikim komadom aluminijske folije. Pa\u017eljivo zatvorite foliju kako bi onemogu\u0107ili izlazak pare. Pecite roladu 40 minuta u pe\u0107nici zagrijanoj na 180 \u00b0C s uklju\u010denim ventilatorom. Nakon 40 minuta bilo bi dobro provjeriti unutarnju temperaturu mesa uz pomo\u0107 termometra. Njegovim odmaranjem dopu\u0161tate opu\u0161tanje mi\u0161i\u0107nih vlakana i ravnomjernije raspore\u0111ivanje sokova kako se, kada zare\u017eete, ne bi razlili po tanjuru.<br>Nakon \u0161to roladu izvadite iz pe\u0107nice, ostavite ju da miruje unutar folije 10-15 minuta. To \u0107e joj dopustiti zavr\u0161etak pe\u010denja i postizanje \u017eeljene unutarnje temperature od 73 \u00b0C.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Obrnuto pe\u010denje mesa<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nisam 100% sigurna koji je to\u010dan hrvatski naziv za ovu tehniku, ali na engleskom glasi: \"reverse-searing\". Pa, \u0161to to to\u010dno zna\u010di? Iskreno, nisam ni ja dugo vremena znala za nju, ali nakon \u0161to sam pro\u010ditala jedan od mnogih sjajnih \u010dlanaka <a href=\"https:\/\/www.seriouseats.com\/reverse-seared-steak-recipe\" target=\"_blank\" rel=\"noopener\">Serious Eats-a<\/a> , ba\u0161 sam se zainteresirala i odlu\u010dila ju testirati na razli\u010ditim vrstama mesa, po\u010dev\u0161i s pure\u0107im prsima.<br><br>Zna\u010di, umjesto da se meso najprije zape\u010de, a onda pe\u0107e u pe\u0107nici, proces ide obrnuto; meso se pe\u010de u pe\u0107nici, a zatim dovr\u0161ava na tavici kako bi se dobila hrskava korica, a zadr\u017eala so\u010dnost. U osnovi, izokre\u0107e korake tradicionalnog pe\u010denja mesa, a kao posljedicu ima dvije vrlo va\u017ene prednosti.<br><br>Prva prednost ove tehnike je ravnomjernije pe\u010denje. Kada meso prvo zape\u010demo na tavici,  podi\u017eemo temperaturu vanjskih slojeva, a kako se meso nastavlja kuhati u pe\u0107nici (temperatura raste izvana prema unutra), riskiramo da se vanjski slojevi prepeku, odnosno presu\u0161e.<br>Obrnuto, pe\u010denjem mesa prvo u pe\u010dnici, omogu\u0107ujemo ravnomjerniji porast temperature unutar slojeva.<br><br>Druga prednost ovog procesa je bolji rezultat pe\u010denja. Da bismo izvana dobili zlatno-sme\u0111u boju, moramo pokrenuti Maillardovu reakciju koja se doga\u0111a izme\u0111u proteina i \u0161e\u0107era. Da bi se to dogodilo \u0161to je br\u017ee mogu\u0107e potrebna nam odgovaraju\u0107a temperatura, kao i mala koli\u010dina vlage na povr\u0161ini mesa. <br><br>\u0160to je lak\u0161e osu\u0161iti: sirovi komad mesa ili kuhani? Ovdje le\u017ei odgovor: s manje vlage, kuhani komad mesa lak\u0161e \u0107e se zape\u0107i od sirovog, a \u0161to je proces br\u017ei, manje topline \u0107e prodrijeti u unutarnje slojeve. Zbog toga je roladu bitno dobro posu\u0161iti kuhinjskim papirom prije nego ju zape\u010demo na tavici.<br><br><strong>Kako obrnuto pe\u010di roladu?<\/strong> Nakon \u0161to meso odstoji 10-15 minuta, izvadite ga iz folije, paze\u0107i da zadr\u017eite sav sok koji je pustio tijekom pe\u010denja. Stavite ga na dasku za rezanje i odre\u017eite kuhinjsku \u0161pagu. Nakon toga ga nje\u017eno potapkajte kuhinjskim papirom kako bi dobro osu\u0161ili povr\u0161inu. Zagrijte tavu s dodatkom malo ulja do srednje-jake vatre. Osim toga, spreman je za samo 15 minuta i vrlo ga je jednostavno za napraviti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Za pripremu umaka koristit \u0107emo istu tavu u kojoj smo prethodno zapekli roladu. Karamelizirani ostatci na tavici \u0107e upotpuniti okus umaka.<br><br>Zapo\u010dnite dinstati luk na umjerenoj vatri. Nakon minute, lagano ga posolite te ga poklopite kada lagano po\u010dne otpu\u0161tati sok. Nakon otprilike 5 minuta maknite poklopac te ga nastavite dinstati. Kako luk omek\u0161ava, po\u010dinje otpu\u0161tanje prirodno prisutnih \u0161e\u0107era. Ti \u0107e se \u0161e\u0107eri po\u010deti karamelizirati u dodiru s visokom temperaturom. Kada po\u010dnete primje\u0107ivati karamelizaciju na dnu posude, dodajte malo vode kako bi deglazirali tavicu. Nakon \u0161to voda ispari, ponovite postupak jo\u0161 1-2 puta dok luk potpuno ne omek\u0161a.<br><br>Zatim dodajte \u010de\u0161njak te sve dinstajte jo\u0161 3 minute. Dodajte bijelo vino i kuhajte dok polovica teku\u0107ine ne ispari. Na kraju dodajte sokove koje je meso ispustilo tijekom pe\u010denja, zajedno sa sokom od naran\u010de, i kuhajte jo\u0161 nekoliko minuta dok ne ispari oko \u2153 teku\u0107ine. Izmiksajte umak te ga poslu\u017eite uz meso.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kako kuhati batat \u201cen papillote\u201d?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ako ste ve\u0107 probali moju <a href=\"https:\/\/stelasfoodstories.com\/hr\/recepti\/moja-omiljena-salata-s-ciklom-i-kozjim-sirom\/\" data-type=\"recipes\" data-id=\"3333\">salatu od cikle i kozjeg sira<\/a>, \u201cen papillote\u201d tehnika bi vam mogla zvu\u010dati poznato. Odre\u0111ena namirnica se zamota u aluminijsku foliju tako da svojim oblikom podsje\u0107a na jastu\u010di\u0107 te se zatim pe\u010de u pe\u0107nici. Ako ima jako debelu koru, kao \u0161to je bio slu\u010daj s mojim, ogulite ga, ali u protivnom koru mo\u017eete i ostaviti. Nare\u017eite batat na jednolike \u0161tapi\u0107e te ga stavite na podu\u017ei komad aluminijske folije. Posolite ga i dodajte malo ulja te \u017eli\u010dicu vode kako bi ubrzali stvaranje pare.<br>Potom presavijte aluminijsku foliju i dobro zatvorite krajeve kako para ne bi mogla izlaziti van. Pecite batat u pe\u0107nici 20 minuta.
